Melt-In-Your-Mouth Parmesan Chicken


I love, love, love this recipe. It is another that has been with me for many years. I often fix this for company or for a crowd. I hope your family loves it like mine does!


Melt-In-Your-Mouth Parmesan Chicken


4 Boneless/Skinless Chicken Breasts

1 Sleeve Ritz Crackers

1 Stick Butter

1/2 C. Grated Parmesan (the powdered version)


Preheat oven to 375°. Rinse & trim the chicken, cut into 3-4 tenders. Pat dry. Crush crackers and place in shallow dish add cheese and toss together. Melt butter in cereal bowl. Dip chicken in butter then roll in cracker mixture. Be sure to press some of this into the chicken so it is well covered. Place chicken on cookie sheet (greased) or baking stone. Sprinkle any leftover cracker mixture on top, covering any bare spots. Bake for 20-23 minutes (depending on the size of your tenders) until no longer pink.


I served this with THESE Tomatoes, Corn, and Pear Salad...Yum!
